Roast Chicken: Beta Version

Dieting and I are getting along slowly, but I must admit when I first met her, (yes, dieting is a lady- she's a bitch but she's good for you), we didn't exactly see eye to eye.  I doubted her constantly and only wanted what I couldn't have.  But now that we're on eating terms, I'm starting to warm up. Peter and I have cut out carbs and some dairy, concentrating on taking in a lot of protein and vegetables and drinking a lot of water.  I must say, I feel great despite the hunger that takes up about 70% of my day.  I suppose it's worth it though.  I have a master plan once I get skinny that only Perry knows! Haha!

When on a diet, a little roasted chicky is great.  Pair it with some kale, onion, cannelloni beans and a touch of ringing fire alarms, and you've got yourself a healthy hearty meal that scares your neighbors.

In retrospect I probably could have cranked the oven to 475 to get this a little more golden.

But it was so juicy!

I made this two nights ago and last night I combined everything along with red kidney beans and chicken sausage to make a really good, even better today soup!  I'll keep you posted when Roast Chicken 1.0 comes around, but I'd say this was a pretty good first try.  Peter thought so!

Oh, and I really did set off the fire alarm in the hall but thankfully it stopped after a few beeps.  Cheers to a small apartment with no exhaust system!
